Freezer

These are the things I nearly always keep in the freezer because they make everyday cooking much easier.

Vegetables

  • Frozen spinach
  • Frozen peas
  • Edamame beans
  • Frozen chopped onions
  • Frozen chopped mushrooms
  • Soup portions

Pulses & Grains

  • Cooked chickpeas
  • Cooked lentils
  • Flatbreads
  • Cooked rice or grains

Fish

  • Salmon fillets
  • Smoked salmon
  • Prawns

These thaw quickly and make excellent last-minute meals.

Meat

  • Chicken fillets — I often freeze them in simple marinades with tamari, garlic, ginger or chilli.
  • Bolognese portions

Other

  • Stock portions
  • Frozen herbs
  • Frozen berries
  • Rye bread for toast or quick lunches
