This smoky Eastern European pepper and aubergine relish is one of those recipes that transforms simple ingredients into something really special. It's delicious alongside grilled chicken, steak or fish, stirred through beans or lentils, or simply spread over rye bread with cottage cheese or a little feta. Each 130g serving contains just 6ml of olive oil, so if you're working to around 1 tablespoon of olive oil per meal, you'll still have plenty left to cook your protein or vegetables. Or, if you're not counting, simply drizzle over a little more before serving.
