If you've never charred cabbage before, prepare to be converted. As it cooks, the edges become sweet, golden and deeply savoury, transforming a humble vegetable into the star of the dish. Tossed with chickpea orzo, ginger and a simple sesame-soy dressing, then topped with crispy-edged eggs, this is one of those easy meals that feels far more special than the ingredients suggest. Ingredients
- Chickpea orzo45g
- Sweetheart cabbage, finely shredded200g
- Large eggs2
- Small garlic cloves, finely sliced2
- Fresh ginger, finely grated1-inch piece
- Spray oilas needed
- Sesame oil1/2 tsp
- Tamari1 tsp
- Oyster sauce1 tsp
- Chilli flakespinch
- Spring onions, finely sliced2

Method

Cook the chickpea orzo according to the packet instructions. Drain and set aside.

Spray a large non-stick frying pan with oil and place over a medium-high heat. Add the cabbage and stir-fry for 2 minutes.

Add the garlic and ginger and cook for a further 2 minutes, stirring regularly.

Continue cooking for another 3-5 minutes, stirring occasionally, until the cabbage is tender and starting to char around the edges. Don't rush this step, as it's where the cabbage develops its sweetness and depth of flavour.

Stir in the tamari, oyster sauce, sesame oil and a pinch of chilli flakes. Cook for 1 minute, then add the cooked chickpea orzo and toss until everything is evenly coated and piping hot.

Meanwhile, fry the eggs until the whites are crisp around the edges and the yolks are still soft.

Spoon the cabbage and chickpea orzo onto a plate, top with the crispy eggs, then scatter over the spring onions and sesame seeds. Serve immediately.
