  • Chopped onion20g
  • extra virgin olive oil1 tbsp
  • Garlic2 cloves, crushed
  • Grated ginger1 tsp
  • Chilli flakespinch
  • Grated cauliflower90g
  • Chopped kale20g
  • Tamari1 tbsp
  • Egg, whisked in a cup1
  • Fried egg1
  • Chopped corianderlots

Method

    Over a medium heat, soften the onion in the extra virgin olive oil.

    Once soft, add the garlic, ginger, chilli, cauliflower rice and kale. Cover with a lid and cook for a couple of minutes to lightly steam the vegetables.

    Remove the lid, add the tamari, and stir until the cauliflower begins to brown slightly and any excess moisture evaporates.

    Pour in the egg mixture and cook for another couple of minutes, stirring gently so it scrambles and coats the "rice".

    Stir through the chopped coriander.

    Serve on a warm plate with a fried egg on top. I like to sprinkle over sesame seeds for extra crunch, but that's optional.

    For a better protein/fibre balance… add bacon for extra protein and sprinkle seeds on for more fibre.
